Cheese and mustard soft pretzels

Teen-friendly freezer snack for lunchboxes.
Ingredients:
  • 375.00 gm self-raising flour
  • 20.00 ml mustard powder
  • 10.00 gm caster sugar
  • 100g chilled butter, chopped
  • 165.00 ml grated vintage cheddar
  • 130.00 gm buttermilk
  • 1 egg, lightly beaten
  • 1 tsp poppyseeds
  • Plain flour, for dusting
Instructions:
  • Preheat your oven to 220C/200C fan-forced and prepare 2 large baking trays by lining them with baking paper.
  • Combine flour, mustard powder, sugar, and butter in a food processor until mixture resembles fine breadcrumbs. Then, add cheese and buttermilk, pulsing until dough just comes together. Add a touch more buttermilk if needed.
  • Transfer the dough onto a lightly floured surface and knead for 30 seconds until smooth. Divide into 12 portions and roll each into a 40cm-long log. Twist into pretzel shapes and place on trays. Brush with egg, sprinkle with poppyseeds, and bake for 10 minutes until lightly golden. Cool completely and store in an airtight container until ready to enjoy. Pack in a lunchbox for a convenient snack.
