Tarte aux Moutarde (French Tomato and Mustard Pie)

Create a delicious French tomato tart with Swiss cheese and mustard for a perfect summer picnic.
Ingredients:
  • 1 (9 inch) refrigerated pie pastry
  • 0.5 cup grainy brown mustard
  • 6 slices Swiss cheese, about 1/4-inch thick
  • 3 large ripe tomatoes, thinly sliced
  • 1 tablespoon olive oil, or as needed
  • 2 tablespoons herbes de Provence
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and delicately line a 9-inch pie dish with the pie pastry. Then, puncture the bottom of the crust with a fork to allow for even baking.
  • Evenly spread a layer of mustard on the bottom of the crust. Top it with Swiss cheese, then beautifully arrange tomato slices in a spiral pattern from the edges to the center. Drizzle oil over the tomatoes and sprinkle herbes de Provence on top.
  • Bake in the oven until the crust is golden brown, cheese is melted, and tomatoes are slightly curled, approximately 20 minutes.
