Indulge in a luscious tarte tatin - a deliciously caramelized upside-down apple tart with crispy, golden pastry.
Ingredients:
  • 150g (1 cup) plain flour
  • 2.00 gm baking powder
  • 40g reduced-fat dairy spread
  • 30.00 gm caster sugar
  • 20.00 gm water
  • 1 egg white, lightly whisked
  • Melted butter, to grease
  • 70g (1/3 cup, firmly packed) brown sugar
  • 2.50 gm ground cinnamon
  • 4 Granny Smith apples, peeled, cored, cut into thin wedges
  • Plain flour, extra, to dust
Instructions:
  • In a bowl, mix flour and baking powder. Use your fingertips to blend in dairy spread until it looks like fine breadcrumbs. Add caster sugar. Create a well in the center, then pour in water and egg white. Use a round-bladed knife to mix until combined and dough begins to form. Shape the dough into a disc using your hands. Cover with plastic wrap and refrigerate for 30 minutes before using.
  • Preheat the oven to 200°C and generously brush a round 20cm cake pan with melted butter. Line the base with non-stick baking paper, then evenly sprinkle the base with brown sugar and cinnamon.
  • 1. Heat a large non-stick frying pan over high heat until hot. 2. Add one-third of the apple slices and cook for 2 minutes, turning occasionally, until golden. 3. Transfer the cooked apple to a plate. 4. Repeat with the remaining apple slices in 2 more batches. 5. Arrange all the cooked apple slices over the sugar mixture in the base of the pan.
  • On a lightly floured surface, roll the pastry into a 20cm-diameter disc, then drape it over the apples and press gently to cover. Bake until the pastry is golden, about 30-35 minutes. Let it rest for 5 minutes before flipping onto a serving platter. Serve hot.
