Carrot and honey tarte tatin

Enjoy a delicious flaky filo tart bursting with flavorful spiced carrots and sweet honey - perfect for a quick and light meal.
Ingredients:
  • 6 sheets filo pastry
  • 50g butter, melted
  • 10g butter, extra
  • 3 bunches Dutch carrots, trimmed, peeled, or 500g baby carrots, peeled, quartered lengthways
  • 1.25 gm ground cumin
  • 1/2 tsp ground coriander
  • 1.25 gm smoked paprika
  • 28.60 gm honey
  • 50g marinated fetta, coarsely crumbled
Instructions:
  • Preheat your oven to 200C. Layer 1 filo sheet on a clean surface, brush with melted butter, and fold in half to form a square. Repeat with each filo sheet and butter, alternating the angle by 45 degrees, to create a stack. Cover with a damp tea towel.
  • In a large 20cm ovenproof frying pan over medium heat, melt the extra butter. Add the carrots and spread them evenly on the base by shaking the pan. Sprinkle in the cumin, coriander, and paprika, then cook until fragrant, shaking the pan occasionally, for about 1 minute. Drizzle with honey and continue cooking for 1-2 minutes until the carrots are well coated in the honey and spices. Season with salt and pepper, then remove from heat.
  • Lay the filo stack on top of the carrots, tucking in the edges to fit the pan. Bake for 15-20 minutes, or until the pastry is golden brown and crisp.
  • Invert the tart onto a serving plate, sprinkle with feta, and serve promptly.
