Indulge in creamy apple pastry delight.
Ingredients:
  • 6 golden delicious or gala apples
  • 42.00 gm lemon juice
  • 200g vanilla sugar
  • 30g unsalted butter, cubed
  • 250g puff pastry*
  • Thick cream or ice-cream, to serve
Instructions:
  • Prepare the apples by peeling, coring, and cutting them into quarters. Place them in a large bowl and coat them with lemon juice and 100g of vanilla sugar for a delightful sweetness.
  • In an oven-proof frying pan or 25cm tarte Tatin pan, combine the remaining sugar with 2 tablespoons of water over low heat. Stir until the sugar is dissolved. Increase heat to medium and cook for about 5 minutes until the sugar caramelizes to a light-golden brown. Place the apple cut-side up in the pan and dot with butter. Cook over very low heat for another 5-6 minutes to partially cook the apple. Remove from heat and let it cool.
  • Preheat the oven to 190°C for a perfectly heated cooking environment.
  • Roll out the pastry into a circle larger than the pan. Gently place the pastry over the apples, tucking any extra underneath. Set the pan on a baking tray to capture any juices. Bake for 35 minutes until the pastry is golden. Let it rest in the pan for 10 minutes. Carefully flip the tart onto a plate. Serve with cream or ice-cream.
