Vegan gyro with marinated tempeh and silken tofu, a delicious twist on a classic Greek dish.
Ingredients:
  • 1 cup vegetable broth
  • 2 tablespoons lemon juice
  • 2 teaspoons dried oregano
  • 2 teaspoons ground thyme
  • 1.5 teaspoons minced garlic
  • 1 (8 ounce) package tempeh
  • 4 (6 inch) whole-wheat pitas
  • 1 dash pink Himalayan salt
  • 1 dash ground black pepper
  • 2 small cucumbers, peeled and grated
  • 1 (12.3 ounce) package silken tofu
  • 1 tablespoon (packed) fresh dill
  • 1 teaspoon minced fresh garlic
  • 0.5 red onion, thinly sliced
Instructions:
  • In a large bowl, mix vegetable broth, soy sauce, lemon juice, oregano, thyme, 1 1/2 teaspoons garlic, Himalayan salt, and a dash of pepper.
  • 1. Bring water to a boil in a saucepan. Cut tempeh in half and add to the boiling water. Boil for 10 minutes to remove bitterness. Then, transfer tempeh to a cutting board to cool slightly.
  • Slice tempeh into thin 1/4-inch slices and immerse in the flavorful vegetable broth marinade. Seal with plastic wrap and let it marinate in the fridge for 8 hours or overnight, giving it a stir now and then to ensure every slice is perfectly infused with the marinade.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and get your baking sheet dressed up with parchment paper.
  • Place the marinated tempeh slices onto the lined baking sheet.
  • Place in the hot oven, remember to turn over halfway through cooking, and bake until beautifully golden brown and crisp around the edges, for about 30 to 35 minutes.
  • Heat pitas in the oven until heated through, about 3 to 5 minutes.
  • Pat dry cucumbers to remove water. Combine tofu, dried cucumbers, dill, 1 teaspoon of garlic, salt, and pepper in a food processor. Blend until tzatziki is thoroughly combined. Taste and adjust seasonings to your preference.
  • Layer 1/4 of the tempeh slices, tomatoes, and red onions on a pita. Top with tzatziki. Repeat with remaining ingredients and pita.
