Ingredients:
  • 40.00 gm caster sugar
  • 10.00 gm cornflour
  • 331.25 gm rice milk
  • 250.00 ml tempura batter mix (see note)
  • 250.00 gm chilled water
  • vegetable oil, for shallow frying
  • 2 green apples, peeled, cored, thinly sliced
  • Strawberries, to serve
  • Icing sugar mixture, to serve
Instructions:
  • Begin by separating three eggs, setting aside the egg whites for later use. In a bowl, whisk together the egg yolks, sugar, and cornflour. In a small saucepan over medium-high heat, warm the milk until it is nearly boiling, stirring constantly. Remove the saucepan from the heat and slowly whisk the hot milk into the egg mixture until the mixture is smooth and well combined.
  • Pour the milk mixture back into the clean pan over medium-low heat. Stir continuously for 5 minutes or until the custard thickens. Take off the heat and place a sheet of baking paper on the surface to prevent a skin from forming.
  • Sift the tempura batter mix into a large bowl. Then, lightly beat the remaining egg and add chilled water. Whisk the mixture until just combined, being careful not to overmix to maintain a slightly lumpy batter consistency.
  • Heat a large frying pan with oil until it reaches 5cm deep and sizzles a piece of bread. Coat apple in batter, lower gently into oil, and cook 4 to 5 pieces at a time for 3 to 5 minutes until golden and crisp. Drain on paper towel and keep warm. Repeat with remaining apples and batter.
  • Sprinkle apples with powdered sugar. Enjoy with creamy custard and fresh strawberries.
