Indulge in crispy fried ice cream: pound cake sandwiches with tempura-battered ice cream. Perfect dessert!
Ingredients:
  • 2 scoops vanilla ice cream
  • 4 slices pound cake (1/2 inch thick)
  • 1 quart vegetable oil for frying
  • 0.75 cup water
  • 1.5 cups all-purpose flour
Instructions:
  • Make ice cream sandwiches by sandwiching each scoop of ice cream between two pieces of pound cake. Wrap them tightly in plastic wrap, pressing on the sandwich to shape around the ice cream. Freeze until solid, for 1 to 2 hours.
  • Preheat deep-fryer to 375 degrees F (190 degrees C) with a glug of oil.
  • Combine egg and water, then mix in flour until smooth. Unwrap frozen sandwiches and coat with tempura batter. Shake off excess batter and fry in hot oil until golden (20-30 seconds). Drain on paper towel-lined plate before cutting and serving.
