Try this irresistible homemade rock shrimp tempura recipe with a creamy spicy sauce, reminiscent of Nobu's famous appetizer.
Ingredients:
  • 2 teaspoons chili-garlic sauce
  • 1 teaspoon rice vinegar
  • 0.25 teaspoon sea salt
  • 2 dashes ground black pepper
  • 3 tablespoons olive oil
  • 0.75 cup ice water
  • 0.75 cup all-purpose flour
  • 2 tablespoons olive oil, or as needed
  • 1 pound rock shrimp, peeled and deveined
Instructions:
  • Prepare the dipping sauce by combining egg yolk, chili-garlic sauce, rice vinegar, sea salt, and black pepper in a bowl. Slowly drizzle in 3 tablespoons of oil while whisking continuously until the sauce is creamy.
  • Combine ice water, flour, and egg yolk in a large bowl and whisk until a smooth batter forms.
  • In a large skillet over medium heat, warm 1 tablespoon of olive oil. Coat the shrimp in batter, allowing any excess to drip off, then pan-fry in the hot oil until golden on both sides, about 3 to 5 minutes. Transfer to paper towels to drain. Repeat with the rest of the olive oil and shrimp.
  • Transfer the cooked shrimp into a spacious bowl and drizzle the sauce over them. Mix until the shrimp are completely coated.
