Rock Creek Lake Fresh Strawberry Pie

Creamy strawberry parfait with layers of sweet strawberry puree over a luscious cream cheese filling.
Ingredients:
  • 1 pastry for a 9-inch pie crust
  • 1 (8 ounce) package cream cheese, at room temperature
  • 1 cup fresh strawberries, hulled and halved
  • 0.75 cup white sugar
  • 0.75 cup strawberry juice
  • 0.25 cup cornstarch
  • 0.25 cup lemon juice
  • 5 cups fresh strawberries, hulled and halved
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and press pie crust pastry into a 9-inch pie pan, pricking it with a fork at 1-inch intervals.
  • Place the pie crust in the preheated oven and bake until beautifully golden, which should take about 15 to 20 minutes. Let it cool completely on a cooling rack.
  • In a bowl, whip cream cheese and 1/2 cup sugar until velvety; evenly spread over the cooled pie crust.
  • In a blender, purée 1 cup of strawberries, 3/4 cup of sugar, strawberry juice, and cornstarch until smooth. Transfer the mixture to a 3-quart pan over medium-high heat. Boil and stir until it thickens, about 4 minutes. Remove from heat and mix in lemon juice.
  • Mix the remaining 5 cups of strawberries into the warm strawberry glaze until coated. Allow the mixture to cool until it reaches room temperature, about 25 minutes. Then, pour it onto the cream cheese layer in the pie crust. Refrigerate until the filling is firm and can be sliced, for at least 3 hours or up to 1 day.
