Irresistible traditional rock cakes, a nostalgic delight reminiscent of Nan's baking.
Ingredients:
  • 225g self-raising flour
  • 4.00 gm baking powder
  • 115g unsalted butter
  • 115g sultanas
  • 50g mixed peel
  • 75g caster sugar
  • Grated zest of 1 orange
Instructions:
  • Preheat your oven to 200°C for optimal cooking temperature.
  • In a large bowl, gently sift the flour and baking powder, then incorporate the butter until it forms a breadcrumb-like texture. Mix in the fruit, sugar, and zest. Add the eggs and combine until a firm dough forms.
  • Scoop walnut-sized portions of the mixture onto a greased baking tray, allowing room for spreading. Bake until golden brown, for about 15-20 minutes. Transfer to a wire rack to cool.
