Indulge in these nostalgic and delicious Rock cakes.
Ingredients:
  • 225.00 gm self-raising flour
  • 125.00 ml plain flour
  • 0.63 gm ground cinnamon
  • 70.95 gm caster sugar
  • 100g butter, chilled, chopped
  • 127.50 gm sultanas
  • 40.00 ml mixed peel
  • 1 egg, lightly beaten
  • 84.98 gm milk
  • Softened butter, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and line 2 large baking trays with baking paper.
  • Sift flours and cinnamon into a large bowl, then stir in sugar. Using your fingertips, rub butter into the mixture until it resembles breadcrumbs. Add sultanas and mixed peel, then make a well in the center. Combine egg and milk in a jug and pour it into the well. Use a butter knife to mix everything into a sticky dough, adding more milk if needed.
  • Using a tablespoon, dollop 1 1/2 tablespoons of mixture onto prepared trays, spacing them 5cm apart.
  • Bake until golden, then let stand for 5 minutes on a wire rack. Serve warm or at room temperature with butter.
