Crispy tempura smelt with a sesame twist for a delightful appetizer.
Ingredients:
  • 1 cup rice wine
  • 1 pound smelt
  • 1 tablespoon all-purpose flour, or as needed
  • 2 quarts oil for deep frying
  • 0.75 cup ice water
  • 0.5 cup all-purpose flour
  • 0.5 cup cornstarch
  • 2 egg yolks
  • 2 teaspoons sesame seeds
  • 2 teaspoons sesame oil
  • 1 teaspoon baking powder
  • 0.5 teaspoon white sugar
Instructions:
  • Combine rice wine and 1/2 teaspoon salt in a bowl, whisking together. Gently coat smelt with approximately 1 tablespoon of flour. Place smelt in the rice wine mixture, cover the bowl with plastic wrap, and let it marinate in the refrigerator for around 20 minutes.
  • Heat oil in a deep fryer or large wok until it reaches 375 degrees F (190 degrees C).
  • Combine ice water, 1/2 cup flour, cornstarch, egg yolks, sesame seeds, sesame oil, baking powder, sugar, and 1/2 teaspoon salt in a bowl and mix thoroughly.
  • Take the smelt out of the rice wine mixture and coat each one individually in the flour mixture until fully coated. Dispose of any leftover rice wine mixture.
  • Fry 2-3 smelt at a time in hot oil until golden all around, for about 3-4 minutes. Remove with a slotted spoon, let them drain on paper towels, then fry the rest. Serve warm.
