Teriyaki tofu kebabs

Vegan-friendly recipe.
Ingredients:
  • 8 button mushrooms, halved
  • 2 zucchinis, cut into 2cm pieces
  • 300g firm tofu, cut into 16
  • 200ml teriyaki & roasted garlic marinade
Instructions:
  • Immerse bamboo skewers in water for 20 minutes to prevent charring while cooking.
  • Skewer mushrooms, zucchini, and tofu in an alternating pattern on bamboo skewers.
  • Transfer the kebabs into a glass dish and generously coat them with the flavorful teriyaki marinade. Allow them to marinate in the refrigerator for 20 minutes to enhance the delicious flavors.
  • Preheat the barbeque or grill plate over medium heat. Place the kebabs on the hot plate or grill, turning them occasionally for even cooking. Grill for 5-10 minutes. Finish by drizzling the kebabs with the remaining marinade before serving with fried rice.
