Teriyaki tofu kebabs

Easy vegetarian kebabs perfect for the barbecue.
Ingredients:
  • 2 large zucchini, halved lengthways, thickly sliced crossways
  • 1 small red capsicum, halved, deseeded, cut into 2cm pieces
  • 12 small cup mushrooms
  • 300g firm tofu, drained, halved horizontally, cut into pieces
  • 150ml bought teriyaki marinade
  • Steamed white rice, to serve
  • Lime wedges, to serve
  • Fresh basil sprigs, to serve
Instructions:
  • Skewer the zucchini, bell peppers, mushrooms, and tofu.
  • - In a dish, arrange the skewers and generously drizzle the marinade over them. Ensure each skewer is coated by turning and brushing with the marinade. Cover and refrigerate for 20 minutes to allow the flavors to seep in.
  • Preheat a barbecue flat plate over medium heat. Grill the skewers, turning occasionally, for 8 minutes or until the tofu is golden and the vegetables are tender.
  • Drizzle any remaining marinade over the dish and serve with rice, fresh basil, and lime wedges.
