"Zesty Mexican-inspired chicken stew with hominy, pinto beans, green chilies, and bold spices in flavorful chicken stock."
Ingredients:
  • 1.5 cups shredded, cooked chicken meat
  • 0.5 onion, chopped
  • 2 tomatoes, chopped
  • 2 (15 ounce) cans white hominy, drained
  • 1 (15 ounce) can ranch-style beans
  • 1 (7 ounce) can diced green chiles
  • 0.5 teaspoon chili powder
  • 0.25 teaspoon ground black pepper
  • 1 pinch dried oregano
  • 4 cups chicken broth
  • 2.5 tablespoons dry potato flakes
Instructions:
  • Add chicken, onion, tomatoes, hominy, pinto beans, green chili peppers, oregano, chili powder, and pepper to a slow cooker. Pour in chicken broth until all ingredients are covered. Cook on low for 6 hours. About 1 hour before serving, stir in potato flakes to thicken.
