Delicious turkey chili with zucchini, green onion, sour cream, and cheddar cheese - perfect for any taste bud!
Ingredients:
  • 3 tablespoons vegetable oil, divided
  • 1.5 pounds ground turkey
  • 1 (1 ounce) package taco seasoning mix
  • 1 teaspoon ground coriander
  • 1 teaspoon dried oregano
  • 1 teaspoon chili pepper flakes
  • 2 tablespoons tomato paste
  • 1 (14.5 ounce) can beef broth
  • 1 (7 ounce) can salsa
  • 1 (14.5 ounce) can crushed tomatoes, or coarsely chopped tomatoes packed in puree
  • 1 (7 ounce) can chopped green chile peppers
  • 1 medium onion, finely chopped
  • 1 green bell pepper, diced
  • 3 medium zucchini, halved lengthwise and sliced
  • 1 bunch green onions, chopped
  • 1 cup sour cream
  • 1 cup shredded Cheddar cheese
Instructions:
  • In a large stock pot over medium-high heat, heat 1 tablespoon of oil. Add turkey, crumble it with a wooden spoon to break apart, then season with taco seasoning mix, coriander, oregano, chili flakes, and tomato paste. Ensure meat is evenly coated with seasonings and continue cooking until turkey is well browned, adjusting heat as needed.
  • - Pour beef broth into the pot and simmer until liquid reduces slightly, approximately 5 minutes. - Add salsa, tomatoes, and green chilies, and continue to cook over a moderate simmer for 10 minutes. - Adjust thickness by adding water as needed throughout the cooking process.
  • While the chili simmers, warm one tablespoon of oil in a large skillet over medium-high heat. Sauté onion and green bell pepper for about 5 minutes until the onion is translucent and the bell pepper is lightly browned. Add them to the chili and let it simmer on very low heat.
  • In the skillet, heat the last tablespoon of oil over medium-high heat. Add the zucchini and cook, stirring occasionally, until lightly browned, about 5 minutes. Then, add the zucchini to the chili, reduce heat, and cook for an additional 15 minutes. Adjust the thickness with water as necessary.
  • Serve chili in bowls, garnish with sour cream, green onion, and cheddar cheese. Enjoy!
