Spicy pinto beans cooked with onions, chicken broth, green chili salsa, jalapeno, and cumin for a flavorful kick.
Ingredients:
  • 1 pound dry pinto beans
  • 1 (29 ounce) can reduced sodium chicken broth
  • 1 large onion, chopped
  • 1 fresh jalapeno pepper, chopped
  • 0.5 cup green salsa
  • 1 teaspoon cumin
  • water, if needed
Instructions:
  • In a large pot, combine pinto beans with chicken broth. Add in onion, jalapeno, garlic, salsa, cumin, and pepper. Bring to a boil, then simmer over medium-low heat for 2 hours, stirring occasionally, until beans are tender. Add water as necessary to maintain bean moisture.
