Create a fusion dish by stir-frying chicken, peppers, salsa, and black beans Chinese-style. Serve it over rice and melt Cheddar cheese on top for a delicious meal.
Ingredients:
  • 1 teaspoon olive oil
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 tablespoons all-purpose flour, or as needed
  • 1 (1 ounce) packet taco seasoning mix
  • 1 pound skinless, boneless chicken breast halves - cut into bite size pieces
  • 2 teaspoons olive oil
  • 1 (15 ounce) can black beans, rinsed and drained
  • 0.5 cup prepared salsa
  • 1 cup shredded Cheddar cheese
Instructions:
  • In a hot skillet, sizzle 1 teaspoon of olive oil. Stir in green and red bell peppers until slightly tender, approximately 5 minutes. Set aside.
  • Combine flour and taco seasoning in a bowl. Coat chicken pieces with the mixture. Heat olive oil in a skillet, cook chicken until no longer pink and browned, about 5 minutes. Add bell peppers, black beans, and salsa. Simmer for 5 minutes to blend flavors.
  • Garnish each serving with a generous sprinkle of sharp Cheddar cheese.
