Air fryer potato hash with bell peppers, jalapenos, and Tex-Mex seasoning for a crispy and flavorful dish.
Ingredients:
  • 1.5 pounds potatoes, peeled and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 red bell pepper, seeded and cut into 1-inch pieces
  • 1 small onion, cut into 1-inch pieces
  • 1 jalapeno, seeded and cut into 1-inch rings
  • 0.5 teaspoon olive oil
  • 0.5 teaspoon taco seasoning mix
  • 0.5 teaspoon ground cumin
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Submerge the potatoes in refreshing cool water for 20 minutes.
  • Begin by preheating your air fryer to a perfect 320 degrees F (160 degrees C). Drain and pat dry the potatoes, then transfer them to a spacious bowl. Drizzle with 1 tablespoon of olive oil and mix well. Place the coated potatoes into the preheated air fryer basket and set the timer for 18 minutes.
  • Combine bell pepper, onion, and jalapeno in the bowl with the potatoes. Drizzle with 1/2 teaspoon of olive oil, then add taco seasoning, ground cumin, salt, and pepper. Mix well to ensure everything is evenly coated.
  • Move the potatoes from the air fryer to the bowl with the vegetables. Place the empty basket back in the air fryer and increase the temperature to 356°F (180°C).
  • Toss the bowl's contents to evenly mix the potatoes with the veggies and seasoning. Transfer to the basket and air fry for 6 minutes. Shake the basket, then air fry until the potatoes are browned and crispy, approximately 5 more minutes. Serve hot.
