Flank steak, black beans, tortilla chips, lettuce, avocado cilantro dressing make a delicious beef bowl.
Ingredients:
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon sweet paprika
  • 0.25 teaspoon ground cumin
  • 0.5 pound flank steak
  • 1 cup cooked white rice
  • 1 cup halved cherry tomatoes
  • 1 cup chopped romaine lettuce
  • 1 cup tortilla chips
  • 0.5 cup canned black beans
  • 1 jalapeno pepper, thinly sliced
  • 1 lime, cut into wedges
  • 0.25 cup crumbled cotija cheese
  • 1 tablespoon chopped fresh cilantro
  • 2 avocados, peeled and pitted
  • 1 cup water
  • 0.5 cup chopped fresh cilantro
  • 2 tablespoons sour cream
  • 1 lime, juiced
  • 1 clove garlic
  • 1 pinch salt
Instructions:
  • Heat a grill pan or skillet over medium-high heat until smoking lightly.
  • Mix together garlic powder, chili powder, kosher salt, paprika, and cumin in a bowl, then massage onto all sides of the flank steak.
  • Place the flank steak on the preheated grill pan, flipping halfway through, and cook until golden and cooked to your liking, approximately 8 minutes. Allow the steak to rest on a work surface for 10 minutes before thinly slicing against the grain.
  • Split rice, tomatoes, romaine lettuce, tortilla chips, black beans, jalapeno peppers, and lime wedges evenly into 2 bowls. Garnish with steak, cotija cheese, and sprinkle 1 tablespoon of cilantro on top.
  • In a blender, blend avocados, water, 1/2 cup cilantro, sour cream, lime juice, garlic, and salt until smooth. Drizzle the dressing over each bowl.
