Cheesy enchiladas with spicy meat sauce, a Tex-Mex classic!
Ingredients:
  • 2 pounds ground beef
  • 3 tablespoons chili powder
  • 2 tablespoons paprika
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 (8 ounce) can tomato sauce
  • 4 cups water
  • 0.5 cup all-purpose flour, divided
  • 1.5 teaspoons sugar
  • 2 tablespoons cooking oil
  • 12 (6 inch) corn tortillas
  • 4 cups shredded American cheese
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, sauté ground beef until fully cooked, then drain excess grease. Season beef with chili powder, paprika, cumin, garlic powder, and salt. Stir in tomato sauce and 2 cups of water, then let simmer over low heat.
  • Combine the rest of the water with flour and sugar until the flour dissolves, then incorporate it into the bubbling meat sauce. Let it simmer until it thickens, approximately 10 minutes.
  • As the sauce simmers, heat oil in a separate skillet over medium-high heat. Quickly warm tortillas in the oil until soft. Stuff each tortilla with a sprinkle of cheese, then arrange them in a 9x13-inch baking dish, saving some cheese for the topping. Pour the meat sauce over the tortillas and finish with the remaining cheese.
  • Bake in a preheated oven for 25 minutes until the cheese is melted and lightly browned.
