Satisfying Tex-Mex Burritos loaded with beans, meat, potatoes, chiles, and tangy salsa. A hearty meal for any group craving a flavorful fiesta.
Ingredients:
  • 1 lb. lean ground beef
  • 1 1/4 cups finely chopped peeled potatoes
  • 1/2 cup chopped onion (1 medium)
  • 2 fresh or canned jalapeño chiles, seeded, chopped
  • 1 (15-oz.) can spicy chili beans, undrained
  • 1/8 teaspoon pepper
  • 10 (10-inch) spinach or flour tortillas
  • 6 oz. (1 1/2 cups) shredded Monterey Jack or Cheddar cheese
  • Thick & chunky salsa, if desired
  • Sour cream, if desired
Instructions:
  • Preheat oven to 350°F and lightly grease a 13x9-inch pan. Cook ground beef, potatoes, onion, and chiles in a large skillet over medium-high heat for 5 to 7 minutes until beef is cooked through and veggies are tender. Remember to stir occasionally. Drain any excess fat.
  • Combine beans with a sprinkle of salt and pepper, ensuring they are mixed thoroughly. Bring the mixture to a boil, then lower the heat and simmer for 5 minutes, stirring often.
  • Divide 1/2 cup of beef mixture onto the center of each tortilla. Sprinkle a generous 2 tablespoons of cheese on top of each one. Roll up the tortillas with the filling inside and fold the ends. Arrange them seam side down in a greased pan and cover with foil before baking.
  • Preheat the oven to 350°F and bake the burritos for 10 to 12 minutes until hot. Serve with salsa and sour cream.
