Savoury Tex-Mex loaded baked potatoes.
Ingredients:
  • 1.2kg potato
  • 425g can Mexe-beans
  • 1 medium tomato, chopped
  • 10.60 gm lime juice
  • 1/2 medium avocado, sliced
  • Fresh coriander leaves, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. Scrub and rinse the potatoes, then pat them dry. Using a fork, pierce each potato 6 times and wrap in foil. Bake on the centre rack for 1 hour and 30 minutes until tender. Remove from oven and let them stand for 10 minutes on a plate.
  • Simmer the beans in a small saucepan over medium heat until warmed through, then mix in the tomato and lime juice while stirring continuously.
  • Unwrap the foil from the potatoes and place them back on the plate. Make a deep cross on the top of each potato. Hold a potato with a tea towel and gently press the base to open the top. Repeat for the rest of the potatoes. Serve the potatoes in bowls topped with bean mixture, avocado, and coriander. Enjoy!
