Savory beef taco rice skillet with customizable toppings for a quick and easy dinner.
Instructions:
  • In a 12-inch nonstick skillet, sauté the beef over medium-high heat for 5 to 7 minutes until browned, stirring often. Drain any excess fat and return beef to the skillet. Add taco seasoning mix and water, and simmer over medium heat until thickened, stirring occasionally for 1 to 3 minutes. Transfer mixture to a large bowl and set aside. Wipe out the skillet carefully.
  • Heat oil in a skillet over medium-high heat. Add onions, bell pepper, frozen corn, and salt. Cook for 7 to 10 minutes, stirring occasionally, until vegetables are tender and slightly browned.
  • Combine the rice and green chiles in the pan and sauté for 4 to 6 minutes, stirring occasionally until the rice is heated and broken up. Add the beef mixture and cook for an additional 1 to 2 minutes to heat through.
  • Take the pan off the heat and then sprinkle cheese on top. Cover the dish and allow it to rest for 1 to 3 minutes until the cheese is fully melted.
  • Sprinkle the rest of the ingredients on top.
