Simple and delicious potluck cake, perfect for sharing.
Ingredients:
  • 1 cup butter
  • 1 cup water
  • 4 tablespoons unsweetened cocoa powder
  • 2 eggs
  • 0.5 cup sour cream
  • 1 teaspoon baking soda
  • 0.5 cup butter
  • 5 tablespoons milk
  • 4 cups confectioners' sugar
Instructions:
  • Preheat your oven to 375°F (190°C) and generously grease a 15x10 inch jelly roll pan.
  • In a large saucepan, bring 1 cup of butter, water, and 4 tablespoons of cocoa to a boil. Remove from heat and stir in 2 cups of flour, 2 cups of white sugar, and salt. Mix thoroughly. Gently beat in eggs, sour cream, and baking soda until just combined. Be careful not to overmix.
  • Grease a 15x10 inch jelly roll pan, then pour in the batter. Bake at 375 degrees F (190 degrees C) for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  • For the icing, melt 1/2 cup of butter or margarine with 4 tablespoons of cocoa and 5 tablespoons of milk until it comes to a boil. Remove from heat, then add confectioners' sugar, vanilla, and nuts while hot. Beat well and immediately ice the cake with the warm icing.
