Satisfying Thai beef salad with zucchini noodles for a refreshing meal.
Ingredients:
  • ½ cup (125ml) sweet chilli sauce
  • 48.80 gm fish sauce
  • 40.00 ml avocado or olive oil
  • 500g No Added Hormones Beef Scotch Fillet Steak
  • 250g pkt Zucchini Noodles
  • 1 Lebanese cucumber, peeled into ribbons
  • 1 carrot, peeled, cut into noodles or peeled into ribbons
  • 1 red capsicum, seeded, thinly sliced
  • 80g bean sprout
  • 125.00 ml basil leaves
Instructions:
  • Combine the sweet chili sauce, fish sauce, oil, and garlic in a bowl, and set aside half of the mixture for later.
  • Preheat chargrill to medium-high heat. Grill beef for 2 minutes on each side. Brush top with some of the leftover sweet chili sauce. Flip and grill for 1 more minute. Brush top with the rest of the sweet chili sauce. Grill for another minute for medium-rare, or longer based on preference. Transfer to a plate, cover with foil, let it rest for 5 minutes, then thinly slice.
  • In a large bowl, mix together zucchini, cucumber, carrot, bell pepper, onion, bean sprouts, and basil.
  • Divide the vibrant salad into individual serving bowls. Generously add the succulent beef on top. Season to taste and drizzle with the flavorful reserved sweet chili sauce mixture.
