Thai chicken cakes

Delightful Thai chicken cakes are sure to please all.
Ingredients:
  • 500g Chicken Mince
  • 35g breadcrumbs
  • 24.40 gm fish sauce
  • 28.00 gm red curry paste
  • 40.00 ml finely chopped coriander root
  • 1 small red chilli, seeds removed, finely chopped
  • 4 spring onions, finely chopped
  • 60ml sunflower oil
  • Iceberg lettuce, to serve
  • Lime wedges, to serve
  • Sweet chilli sauce, to serve
Instructions:
  • Combine the mince, egg, breadcrumbs, fish sauce, curry paste, coriander root, chili, and spring onion in a bowl using your hands.
  • Shape the mixture into 24 small patties using tablespoons, gently pressing to slightly flatten each one. Place them on a large baking tray and pop in the fridge to chill for 15 minutes.
  • In a hot frypan, sear the patties for 2 minutes per side or until fully cooked.
  • Garnish cakes with fresh lettuce leaves, lime wedges, and drizzle with sweet chili sauce before serving.
