Delicious Thai chicken meatballs - perfect for snacking!
Ingredients:
  • 500g Coles RSPCA Approved Chicken Mince
  • 1 garlic clove, crushed
  • 2cm piece fresh ginger, peeled, finely grated
  • 3 fresh makrut lime leaves, finely chopped
  • 20.00 ml chopped fresh mint leaves
  • 20.00 ml chopped fresh coriander leaves
  • 48.80 gm fish sauce
  • 21.00 gm lime juice
  • 16.00 gm brown sugar
  • 1 small red chilli, seeded, finely chopped
  • 18.20 gm peanut oil
  • Lime wedges, to serve
  • Extra fresh mint sprigs, to serve
Instructions:
  • Mix together ground beef, minced garlic, fresh ginger, makrut lime leaves, mint, and coriander in a bowl.
  • Roll level tablespoons of the mixture into balls using your hands. Place the balls on a large plate and refrigerate for 30 minutes.
  • In a small bowl, combine fish sauce, lime juice, sugar, and chili. Stir until the sugar is fully dissolved.
  • In a large non-stick frying pan over medium heat, heat oil. Cook meatballs in two batches, turning occasionally, for 10 minutes until golden brown and fully cooked. Serve with dipping sauce, lime wedges, and garnish with extra mint sprigs.
