Thai Chicken Wraps

Whip up a quick and delicious Thai chicken dish in under 30 minutes.
Ingredients:
  • 1 cup Oriental dressing
  • 1/4 cup creamy peanut butter
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1 pound boneless, skinless chicken breasts, cut into 1/2-inch strips
  • 1/2 teaspoon finely chopped gingerroot
  • 3 cups coleslaw mix (8 ounces)
  • 1 medium red bell pepper, cut into thin strips
  • 2 tablespoons chopped peanuts
  • 1/4 cup chopped fresh cilantro
  • 6 flour tortillas (8 to 10 inches in diameter)
Instructions:
  • Combine the dressing, peanut butter, and red pepper until creamy. Reserve half of the mixture to accompany the wraps.
  • Spray a 10-inch nonstick skillet with cooking spray and heat over medium-high heat. Sauté chicken and gingerroot until chicken is nicely browned, stirring occasionally. Set aside about 1/4 cup of the dressing mixture. Pour the rest of the dressing mixture into the skillet with the chicken. Cover and simmer over medium-low heat for 3 to 4 minutes, stirring occasionally, until chicken is cooked through. Remove chicken from skillet.
  • Combine 1/4 cup reserved dressing mixture, coleslaw mix, bell pepper, peanuts, and cilantro in the skillet. Toss until well coated. Spread 1/3 cup each of coleslaw mixture and chicken down the center of each tortilla, then roll up. Serve with the remaining dressing mixture for dipping.
