Delicious Thai Fish Cakes - an Asian must-try!
Ingredients:
  • 800g boneless white fish fillets, skin removed, chopped
  • 42.00 gm lime juice, plus extra lime wedges, to serve
  • 21.00 gm gluten free soy sauce
  • 3 garlic cloves, chopped
  • 2 long red chillies, seeded, finely chopped
  • 2 lime leaves, finely shredded, or finely grated zest of 1 lime
  • 150g green beans, finely sliced
  • 3 shallots, finely sliced
  • 62.50 ml coriander leaves, finely chopped
  • 375.00 ml gluten-free breadcrumbs
  • 75.08 gm peanut oil
  • 68.75 gm sweet chilli sauce, to serve
  • Coriander sprigs, to serve
Instructions:
  • Combine the fish, lime juice, soy sauce, garlic, and chili in a food processor until well mixed. Transfer the mixture to a large bowl, then add lime leaves, beans, shallots, coriander, and breadcrumbs. Use your hands to blend everything together, then shape into 1/4-cup patties.
  • Heat oil in a spacious non-stick pan on medium heat. Cook the pieces in batches, turning occasionally, for about 6 minutes until they are golden brown and fully cooked. Place them on a plate lined with paper towel. Enjoy with sweet chili sauce, lime wedges, and fresh coriander.
