Thai green curry and broccoli soup

Quick and easy cheat soup - the ultimate winter comfort food!
Ingredients:
  • 1 large head broccoli
  • 56.00 gm Thai green curry paste
  • 637.50 gm chicken style liquid stock
  • 2 potatoes, peeled, chopped
  • 400ml can coconut milk
  • 150g dried rice stick noodles
  • 42.00 gm lime juice
  • Fresh coriander leaves, to serve
  • Sliced green onion, to serve
Instructions:
  • Trim off the broccoli stems and slice thinly, then cut into small florets.
  • 1. Start by heating a large heavy-based saucepan over medium-high heat. Add the curry paste and cook while stirring for 2 minutes until it becomes fragrant. 2. Gradually combine the stock into the saucepan. Add 2 cups of cold water, along with the potato, broccoli stems, and half of the broccoli florets. 3. Cover the saucepan and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 10 to 12 minutes until the potato is tender.
  • Blend or process until velvety. Return to pan over medium heat, then add remaining broccoli, coconut milk, and noodles. Season with salt and pepper, and simmer uncovered until noodles are tender. Finish by stirring in lime juice.
  • Garnish the soup with fresh coriander and sliced green onions before serving.
