Budget-friendly chicken drumsticks, prep in advance with our tips for a delicious dinner.
Ingredients:
  • 8 chicken drumsticks
  • 87.50 gm Thai green curry paste
  • 13.60 gm desiccated coconut
  • 32.00 gm brown sugar
  • 1/2 small butter lettuce, leaves separated, torn
  • 1 Lebanese cucumber, halved lengthways, deseeded, thinly sliced
  • 250.00 ml bean sprouts, trimmed
  • 42.00 gm lime juice
  • Lime wedges, to serve
Instructions:
  • Preheat the oven to 200C/180C fan-forced. Make 3 deep slits in each drumstick using a small, sharp knife.
  • In a large bowl, combine the curry paste, coconut, sugar, and 1 tablespoon of cold water. Mix well. Add the chicken and season with salt. Stir until chicken is coated evenly.
  • Arrange the chicken in a ceramic baking dish in a single layer. Bake until browned and cooked through, about 50 minutes.
  • In a large bowl, toss together lettuce, cucumber, sprouts, and lime juice. Serve the chicken with the refreshing lettuce mixture and lime wedges on the side.
