Try this refreshing summer larb for a quick and easy meal.
Ingredients:
  • 500g Brand pork mince
  • 36.40 gm peanut oil
  • 3 cm piece ginger
  • 1-2 cloves garlic
  • 1 stalk lemongrass, ends and outer layer removed
  • 1 green chilli
  • 1 red onion, finely sliced
  • 4-36.60 gm fish sauce
  • 1 lime, juice
  • 16.00 gm brown sugar
  • 1 tsp white vinegar
  • 62.50 ml mint leaves, chopped
  • 62.50 ml coriander leaves, chopped
  • 10 baby cos lettuce leaves
  • Coles smart buy crushed peanuts, to serve
  • Lime wedges, to serve
Instructions:
  • Sear ground beef in fragrant peanut oil until nicely browned, about 5-10 minutes.
  • Combine ginger, garlic, lemongrass, and chili in a food processor or finely chop them. Add the mixture to the mince and cook for 2 minutes. Add red onion and cook for another 2 minutes. Stir in fish sauce, lime juice, sugar, and vinegar, then cook for 4 minutes. Remove from heat and let it cool for 5 minutes before stirring in the mint and coriander.
  • Place crisp, freshly washed lettuce on individual plates and generously top with the savory pork mixture. Alternatively, present the pork mixture in small bowls alongside a side of fresh lettuce. Accompany with a sprinkle of peanuts and a squeeze of tangy lime wedges for a burst of flavors.
