Whip up a delicious pork mince salad with vibrant flavors!
Ingredients:
  • 18.20 gm peanut oil
  • 500g lean pork mince
  • 1 stem lemon grass, pale section only, finely chopped
  • 1 fresh long green chilli, finely chopped
  • 60ml (1/4 cup) fresh lime juice
  • 24.40 gm fish sauce
  • 22.00 gm sweet chilli sauce
  • 1 tsp finely grated lime rind
  • 1/2 small red onion, thinly sliced
  • 82.50 ml fresh coriander leaves
  • 40.00 ml torn fresh mint
  • Baby cos lettuce leaves, to serve
  • 40g (1/4 cup) roasted peanuts, finely chopped, to serve
Instructions:
  • First, heat half of the oil in a wok on high heat until it starts to smoke. Then, add half of the pork mince, lemongrass, and chili. Stir-fry for 3-4 minutes, breaking up any clumps, until the pork changes color. Transfer this mixture to a heatproof bowl. Repeat this process with the remaining oil, pork, lemongrass, and chili, making sure to reheat the wok. Let the mixture cool in the bowl for 15 minutes.
  • Combine lime juice, fish sauce, sweet chilli sauce, and lime rind in a small bowl. Pour the dressing over the pork mixture. Mix in the onion, coriander, and mint. Fill lettuce leaves with the pork mixture and top with peanuts before serving.
