Portable and delicious pad Thai lettuce wrap bento box - ideal for quick and tasty solo lunches!
Ingredients:
  • 1 tablespoon olive oil
  • 0.75 cup chopped skinless, boneless chicken breast
  • 0.25 cup Thai peanut sauce
  • 0.5 carrot, shredded
  • 3 tablespoons bean sprouts
  • 0.5 tablespoon soy sauce
  • 4 romaine lettuce leaves, or to taste
  • 0.25 cup sliced red cabbage, or to taste
  • 1 teaspoon chopped peanuts, or to taste
  • 1 green onion, chopped
  • 1 lime, cut into 4 wedges
Instructions:
  • In a skillet over medium-high heat, brown the chicken in oil until cooked through, about 8 minutes. Remove from heat.
  • Combine the chicken, peanut sauce, carrot, bean sprouts, and soy sauce in a bowl. Spoon into one compartment of the bento box. Fill another compartment with separate lettuce leaves. Arrange red cabbage, peanuts, green onion, and lime wedges in the remaining compartments.
  • Using a spoon, fill the lettuce leaves with the chicken mixture, top with desired toppings, and wrap them up.
