Delicious pork and vermicelli lettuce cups - a simple and tasty weeknight dinner.
Ingredients:
  • 36.80 gm vegetable oil
  • 500g pork fillet, trimmed
  • 100g vermicelli noodles
  • 2 Lebanese cucumbers, halved lengthways, thinly sliced
  • 250g cherry tomatoes, quartered
  • 3 green onions, thinly sliced
  • 125.00 ml fresh coriander leaves
  • Butter lettuce leaves, to serve
  • 62.50 ml coriander stems, root attached, washed, finely chopped
  • 1 large red chilli, seeded, finely chopped
  • 1 garlic clove, crushed
  • 45.00 gm brown sugar
  • 76.25 gm fish sauce
  • 65.63 gm lime juice
Instructions:
  • Prepare the flavorful Nam jim by mixing fresh coriander, spicy chilli, pungent garlic, sweet sugar, savory fish sauce, and zesty lime juice in a glass bowl. Allow the flavors to meld together while you move on to the next step.
  • - Preheat oven to 200C/180C fan-forced and line a roasting pan with baking paper. - Heat oil in a large frying pan over medium-high heat, then add pork and cook for 5 minutes each side until browned. - Transfer the pork to the prepared pan and roast for 20 minutes, or until juices run clear when pieced with a skewer. - Finally, transfer the pork to a plate, cover with foil to keep warm, and serve.
  • 1. Place noodles in a heatproof bowl and pour boiling water over them. Let them sit for 10 minutes until soft. Drain and rinse under cold water. 2. Transfer the noodles to a large bowl and roughly chop them with kitchen scissors. 3. Add cucumber, tomato, onion, coriander, and mint leaves.
  • Slice the pork thinly and add it to a bowl with noodles. Gently toss the ingredients together and drizzle with nam jim. Mix gently to combine. Serve the pork and noodles in lettuce cups with the remaining nam jim on the side.
