Ingredients:
  • 18.20 gm peanut oil
  • 300g pork mince
  • 1 garlic clove, crushed
  • 32.00 gm brown sugar
  • 1/2 tsp finely grated lime rind
  • 10.60 gm lime juice
  • 40.00 ml chopped fresh coriander leaves
Instructions:
  • In a wok or medium frying pan over medium-high heat, sizzle the garlic and mince in oil for 5 to 7 minutes, stirring constantly until the pork is crispy and fully cooked.
  • Lower the heat to medium and incorporate sugar, fish sauce, lime zest, and juice. Cook while stirring for 5 minutes until the mixture thickens. Take it off the heat and mix in the fresh coriander.
  • Microwave pork mixture on medium-high (75%) for 2 to 3 minutes or until heated through, then scoop into fresh lettuce leaves and enjoy.
