Barbecued Thai pork ribs

Irresistibly delicious sticky, salty, and sweet pork ribs that will be a hit with the entire family.
Ingredients:
  • 1.2kg pork spare ribs
  • Ground white pepper
  • 60ml (1/4 cup) Panda Brand Oyster Sauce
  • 21.00 gm light soy sauce
  • 12.20 gm fish sauce
  • 10.00 gm caster sugar
  • Fresh coriander sprigs
  • Thai basil sprigs, to serve
  • Sliced long fresh red chilli, to serve
  • Steamed rice, to serve
Instructions:
  • Preheat your oven to 200C/180C fan forced. Prepare two foil parcels by layering foil and baking paper. Season both sides of half the ribs with salt and white pepper, wrap up tightly, and repeat with the remaining ribs. Place the foil parcels side by side in a large baking dish. Bake for 2 hours until the pork is tender. Allow to cool slightly, then chill in the fridge for 4 hours or overnight.
  • Combine the oyster sauce, soy sauce, fish sauce, sugar, and 2 tablespoons of water in a small bowl. Mix until the sugar is fully dissolved.
  • Heat up a lightly greased barbecue grill or chargrill pan on high. Unwrap the pork ribs. Grill the ribs for 2 minutes. Flip them over and brush with some of the oyster sauce mixture. Continue grilling, turning and brushing frequently, for another 10 minutes until the ribs are golden and tender. Transfer to a serving platter and garnish with coriander, basil, and chili. Serve with steamed rice.
