Ingredients:
  • 500g lean pork mince
  • 1 to 28.00 gm Thai green curry paste (see note)
  • 36.60 gm fish sauce
  • 10.00 gm caster sugar
  • 40.00 ml fresh coriander leaves, roughly chopped
  • olive oil cooking spray
  • Steamed rice, to serve
  • Shredded red cabbage, to serve
  • Sweet chilli sauce, to serve
Instructions:
  • Combine mince, curry paste, fish sauce, sugar, and coriander in a food processor. Pulse until blended.
  • Shape the mixture into 12 portions, rolling each into an 8cm-long sausage shape. Thread them onto skewers, place on a plate, cover, and refrigerate for 30 minutes.
  • 1. Preheat the barbecue plate over medium-high heat. 2. Coat the sausages with oil. 3. Grill, turning occasionally, for 15 minutes or until fully cooked. 4. Let them rest for 5 minutes before serving.
  • Present the skewers alongside fluffy rice, crisp shredded cabbage, and a drizzle of delectable sweet chili sauce.
