Elevate your meal with a flavorful fish curry soup served over rice.
Ingredients:
  • 1 tablespoon peanut oil
  • 0.5 sweet onion, finely chopped
  • 1 red bell pepper, chopped
  • 3 tablespoons red Thai curry paste
  • 1 (14 ounce) can coconut milk
  • 12 ounces monkfish, cut into cubes
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice
  • 2 tablespoons cilantro, chopped
Instructions:
  • In a large saucepan over medium heat, warm peanut oil. Add chopped onion and cook until softened and translucent, about 3 to 5 minutes. Toss in red bell pepper and cook for an additional 3 to 5 minutes until softened. Mix in curry paste and cook for 1 minute. Slowly pour in coconut milk and gently bring to a simmer.
  • Once the coconut milk is gently simmering, add the cubed monkfish and let it simmer for 7 to 10 minutes until the fish is firm and the center is no longer translucent. Finish by adding fish sauce, lime juice, and cilantro before serving.
