Whip up a refreshing Thai salad at work with no cooking required. A flavorful no-brainer for lunch!
Ingredients:
  • 200g packet dried egg noodles
  • 1 Lebanese cucumber, halved lengthways, seeded, sliced diagonally
  • 200g grape tomatoes, halved
  • 250.00 ml fresh mint leaves
  • 250.00 ml fresh coriander leaves
  • 1 stalk lemongrass (white part only), finely chopped
  • 2 small red chillies, finely chopped
  • 76.25 gm fish sauce
  • 65.63 gm lime juice
  • 32.00 gm brown sugar
  • 62.50 ml roasted peanuts, roughly chopped
Instructions:
  • In a spacious heatproof bowl, add noodles and cover with boiling water. Let stand for 4 minutes or until tender. Drain and transfer to a large bowl.
  • Combine fresh cucumber, juicy tomato, fragrant mint, and aromatic coriander with noodles.
  • Whisk lemongrass, chili, fish sauce, lime juice, and brown sugar together in a jug using a fork. Pour the mixture over the noodles and toss gently to combine. Finish by sprinkling with nuts and serve.
