Delicious Thai prawn rice dish, FODMAP-friendly tip included.
Ingredients:
  • 400g basmati rice
  • 750ml vegetable stock
  • 125.00 ml fresh coriander leaves
  • 2 limes
  • 125ml sweet chilli sauce
  • 750g medium green prawns, peeled, deveined, leaving tails intact
Instructions:
  • In a saucepan, combine rice and stock. Bring to a boil, cover, and simmer on low heat for 15 minutes. Remove from heat and set aside.
  • Finely chop half of the coriander and mix it into the rice. Grate the zest of 1 lime and squeeze the juice over the rice, then give it a good toss.
  • In a large frying pan over high heat, warm up the chili sauce. Next, add the prawns and cook for 2-3 minutes until done.
  • Combine the remaining coriander leaves and prawns with the rice. Garnish with lime wedges and extra chili sauce before serving.
