Ingredients:
  • 1 brown onion, quartered
  • 2 garlic cloves
  • 2 small fresh red chillies, stems removed and halved
  • 1 small ripe tomato, quartered
  • 3.05 gm shrimp paste (optional)
  • 500g lean pork mince
  • 24.40 gm fish sauce
  • 1 lemon or lime, juiced
  • 16.00 gm soft brown sugar or palm sugar
  • 40.00 ml finely chopped fresh coriander
  • 3 green shallots, finely chopped
  • 6 iceberg lettuce leaves, washed or steamed Jasmine rice, to serve
Instructions:
  • Add the onion, garlic, chilies, tomato, and shrimp paste to a food processor or blender and pulse until roughly chopped.
  • In a large frying pan over high heat, heat sesame oil until shimmering. Add the onion mixture and cook for 5 minutes, stirring occasionally.
  • Cook the pork mince over medium heat for 10-15 minutes, stirring frequently, until it is fully cooked and fragrant.
  • Combine the fish sauce, lime or lemon juice, and sugar and mix well. Just before serving, mix in the coriander and shallots. To serve, spoon into lettuce leaves as an appetizer or pair with rice for a satisfying main dish.
