Quick and flavorful coconut shrimp simmered with garlic and ginger, served with rice and broccoli for a delicious meal in just 30 minutes!
Ingredients:
  • 4 cloves garlic, peeled
  • 1 (1 inch) piece fresh ginger root
  • 1 fresh jalapeno pepper, seeded
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground turmeric
  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 1 pound medium shrimp - peeled and deveined
  • 2 tomatoes, seeded and diced
  • 1 cup coconut milk
  • 3 tablespoons chopped fresh basil leaves
Instructions:
  • In a food processor or blender, blend garlic, ginger, jalapeno, salt, and turmeric until it forms a smooth paste. Set aside.
  • In a skillet over medium heat, sauté the onion in oil until translucent, stirring often. Then add the spice paste and cook for a few minutes to enhance the flavors.
  • Cook the shrimp until they turn pink, then add the tomatoes and coconut milk. Cover and simmer for 5 minutes, then uncover and simmer for an additional 5 minutes to thicken the sauce. Add the fresh basil in the last minute of cooking.
