Make flavorful Asian-style fish fillets in 20 minutes with just five ingredients in a skillet. Perfect for a quick and delicious dinner - pair with vegetables.
Ingredients:
  • 2 teaspoons canola or vegetable oil
  • 1 bag (1 lb) frozen stir-fry vegetables (about 4 1/2 cups)
  • 1 tablespoon canola or vegetable oil
  • 4 tilapia fillets, about 1/2 inch thick (about 1 1/4 lb)
  • 4 tablespoons peanut sauce
Instructions:
  • In a large nonstick skillet, heat 2 teaspoons of oil over high heat. Add the frozen vegetables and cook for 4 to 5 minutes, stirring often, until they are crisp-tender. Divide the vegetables among 4 dinner plates and cover to keep them warm.
  • Pour 1 tablespoon of oil into the skillet and lower the heat to medium-high. Place the fish fillets in the skillet and cook for 3 minutes. Flip the fish over, then generously spread 1 tablespoon of peanut sauce on each fillet. Continue cooking for about 4 more minutes or until the fish is flaky. Serve the fish alongside vegetables.
