Elevate dinner with this quick and easy sausage recipe.
Ingredients:
  • 300.00 gm jasmine rice
  • 9.20 gm vegetable oil
  • 500g packet beef with garlic and parsley sausages
  • 56.00 gm Thai yellow curry paste
  • 400ml can coconut milk
  • 300g stir-fry vegetables
  • 82.50 ml fresh coriander leaves
Instructions:
  • Start by thoroughly rinsing the rice under cold running water. Then, in a large saucepan, combine the rice with 1 1/2 cups of cold water. Cover the saucepan and bring it to a boil over high heat. Once boiling, lower the heat to medium-low and let it simmer partially covered for 12 to 15 minutes until all the liquid is absorbed. Take it off the heat and let it sit for 5 minutes. Finally, season with salt and pepper and fluff the rice with a fork to ensure the grains are separated and perfectly cooked.
  • Heat oil in a large, deep frying pan over medium-high heat. Cook sausages, turning occasionally, for 8 to 10 minutes until golden brown and cooked through. Transfer to a cutting board and slice thickly.
  • In the pan, keep 1 teaspoon of oil. Lower the heat to medium and stir in the curry paste. Cook for 1 minute until fragrant. Pour in the coconut milk and bring it to a simmer.
  • Place the sausages back in the pan along with the vegetables. Let it simmer for an additional 3 to 4 minutes, or until everything is heated through. Serve the curry over rice and garnish with fresh coriander leaves.
