Easy and quick Thai seafood soup.
Ingredients:
  • 9.20 gm vegetable oil
  • 56.00 gm gluten-free Thai green curry paste (see note)
  • 2 x 400ml cans coconut milk
  • Zest and juice of 1 lime
  • 3 makrut lime leaves (see note)
  • 48.80 gm fish sauce
  • 500g good-quality seafood marinara mix (see note)
  • 40.00 ml coriander leaves
  • Steamed jasmine rice, to serve
  • Extra lime wedges to serve
Instructions:
  • In a large deep frypan over medium heat, heat oil and cook green curry paste, stirring, for 1 minute until fragrant. Add coconut milk, lime zest and juice, makrut lime leaves, and fish sauce. Simmer for 5 minutes. Add seafood marinara mix and simmer for an additional 5 minutes until seafood is cooked, discarding any unopened shellfish. Stir in coriander leaves, then serve bouillabaisse with steamed rice and lime wedges for squeezing.
