Thai-style curried fish

Ingredients:
  • 1-36.80 gm vegetable oil
  • 2 carrots, cut into wafer-thin strips
  • 2 zucchini, cut into wafer-thin strips
  • 1-56.00 gm Thai red curry paste
  • 10.00 gm caster sugar
  • 375ml coconut milk
  • 8 small boneless fish fillets
  • Coriander leaves, to garnish
  • Steamed jasmine rice, to serve
Instructions:
  • In a heated frypan, quickly stir-fry vegetables for 1-2 minutes and set aside. Add curry paste and stir for 30 seconds. Incorporate sugar, fish sauce, coconut milk, and fish, then simmer for 3-4 minutes until cooked. Reintroduce the vegetables to warm through. Finish with a sprinkle of fresh coriander and serve with rice.
