Thai-Style omelette with prawns recipe

Delicious Thai-style omelette with juicy Aussie prawns.
Ingredients:
  • 500g Australian raw prawns, peeled, deveined
  • 26.40 gm Thai chilli jam
  • 375g pkt Traditional Stir-Fry vegetables
  • 8 Free Range Eggs, lightly whisked
  • 60ml oyster sauce
Instructions:
  • Preheat a wok or large deep frying pan over high heat and spray with olive oil. Stir-fry the prawns for 2 mins. Add the chili jam and stir-fry for 30 secs until prawns are coated and cooked through. Transfer to a heatproof bowl.
  • Coat wok or pan with a light mist of olive oil spray. Toss in vegetables and stir-fry for 2-3 mins until just tender. Add prawns back to the wok with 1 tbs water and stir-fry for 1 min until fully combined. Transfer the flavorful mixture to a spacious heatproof bowl.
  • In a jug, whisk together 1 egg and 2 tablespoons of water. Season with salt and pepper. Use a paper towel to wipe the wok or pan clean. Place the wok or pan over medium heat and spray with olive oil spray. Pour a quarter of the egg mixture into the wok or pan, swirling to coat the base. Cook for about 1 minute or until the egg mixture is nearly set. Transfer the cooked omelette to a serving plate. Repeat this process for 3 more batches with the remaining egg mixture.
  • Place a generous amount of the prawn mixture on one half of each omelette. Gently fold the other half over to create a delicious filling. Finish by drizzling with the flavorful oyster sauce before serving.
